Cornmeal Tasty Tilapia with Mushroom Risotto and Creamy Avocado Salad
Ingredients:
· Tasty Delite Cornmeal
· 1 Egg White
· Butter
· Oil to fry
· 1 Tilapia fillet
For the couscous
· 4 Green Onions
· 3 Garlic
· 2 Portobello Mushrooms
· 2 tbsp. Olive Oil
· 2 cups of Arborio Rice
· 1 cup of White wine
· Salt and pepper
· Herbs of your preference (oregano, basil, thyme)
· Butter (optional)
· Parmesan cheese (optional)
For the salad
· One bunch of spinach
· ½ Cucumber
· ½ Red onion
· ½ Green pepper
Put in the blender this ingredients for the vinaigrette
· ½ bunch of cilantro
· 1 Avocado
· 1 lime
· 1 tbsp. of balsamic vinegar
· 2 tbsp. of olive oil
· Salt and pepper
· Honey to taste
Beat egg whites until white and frothy. In another bowl, put our Tasty Delite Cornmeal mix. Dip the tilapia fillet in the egg white and then pass it through the Tasty mix, covering it completely. Melt the butter and some oil in a pan, when the oil is hot enough put your fillet in the pan, just flip it one time to keep a nice golden brown covering.
For the risotto, finely cut the green onions, the garlic and the Mushrooms, if you like you can use a different type of mushrooms or a mix. In a medium large pan, add two tablespoons of Olive oil and then add the chopped ingredients, after 2-3 minutes add the Arborio rice, keep stirring till it gets a little browner, add the white wine to your rice and wait till it evaporate completely, after this keep slowly adding one cum of water at a time, until the rice is ready, don’t forget to stir the rice regularly, so it can cook thoroughly, add some salt, herbs and pepper to taste, with the butter and the parmesan cheese.
